This reminds me of the Tuna Casserole that grandma used to make, but since my wife doesn't like Tuna I found Salmon to be equally good!
2 cups uncooked medium egg noodles (4 oz)
2 jars Alfredo Sauce
1/2 cup Milk
1 bag frozen cut green beans
1 bag frozen sliced carrots
2 lbs Salmon fillets
2 cups crushed Ruffles potato chips
Salt & Pepper
Cook the noodles according to package directions, maybe a little al dente.
Season the salmon fillets with salt and pepper and bake at 350 until just cooked through, maybe a little rare since it will get cooked again while baking
In the pot that you boiled the noodles in, combine the alfredo sauce, milk and frozen vegetables. Cook over med heat until warmed through. Season to taste with salt and pepper. Add the noodles and stir to coat.
Stir in 1/2 cup of potato chips. Break up the salmon and gently fold into the noodles. Transfer the mixture to a greased baking pan and top with the remaining potato chips.
Bake at 350 for 35 minutes.
